Our Story So Far...
Rooted Hospitality Group (RHG, or Rooted) is an award-winning, family owned, restaurant hospitality company that has been exceeding customers’ expectations since 2009. Founded by David and Rachel Hersh, the dream of RHG was born in Louisiana along with David and Rachel’s first son Jude, while they were both working in local restaurants. The company (and Jude for that matter) has grown since its humble beginnings in 2009 to five incredible concepts including, RUMBA, Cowfish, flora, Fauna and AVO TACO, the latter of which, has been proudly serving local guests out of the Port Orleans Brewery since 2018! With so much family in the New Orleans area, it was only a matter of time before we found the right opportunity to put a second location where our company was born! We’re thrilled to be bringing our Island Vibes to Metairie with the opening of RUMBA very soon!

The Heart Behind the Experience

Gerald Hilbun was born in Baton Rouge and has worked in the restaurant industry since he was in high school. Gerald started as a server at Copelands and Semolina in Baton Rouge, then worked at Houston’s on St. Charles in New Orleans for several years. He worked his way up from server to General Manager at Houston’s locations in New Orleans, Miami, Boca Raton, Orlando, Palm Beach, Los Angeles and San Francisco. Gerald was later the founding team of Bricktop’s Restaurants based out of Nashville before joining Rooted Hospitality Group in New York in 2016. He started with Rooted as the General Manager of Cowfish in Hampton Bays for several years before becoming the Chief Operating Officer in 2020. Gerald is extremely passionate about service, hospitality, beautiful food presentations, and servant leadership which are the bedrock qualities of Rooted Hospitality Group. With deep Louisiana roots, Gerald is eager to add to the culture of hospitality that New Orleans is so famous for.

David Roach
General Manager
David Roach was born and raised in the New Orleans area. His restaurant career began at age 16 working for his mother who was a manager at Steak & Ale. David spent his teenage years into his early 20’s working nearly every function as an employee. After graduating from UNO, David entered the next phase of his career as a manager with Houston’s. He has never branched out from the industry in his 35 years working in hospitality. That career has taken David to other cities, but he always returned home.

With over a decade of experience in the hospitality industry, working for different companies such as The Cheesecake Factory, Copelands, meril where I got to work alongside of Emeril legasse. I’ve honed my skills in creating unforgettable guest experiences, leading high performing teams, and embracing the art of hospitality. New Orleans taught me that great food and warm service can transform moments into lifelong memories, and I strive to reflect that in everything I do.
